Turn any braise into a slow cooker meal

Slow cookers work by holding a low, steady heat for hours, so a dish that would simmer for an hour in the oven maps to roughly six to eight hours on low, or three to four on high. Enter your recipe's conventional cooking time and the tool gives both settings. Low is the gentler, more forgiving option and better for tougher cuts; high gets you there faster when you started late.

Two adjustments make conversions work: cut the liquid down, because a slow cooker barely evaporates, and brown meat and onions in a pan first for flavour, since the pot itself will not colour anything. Add dairy and fresh herbs near the end.
