How long to roast beef
As a guide, beef takes about 40 minutes per kg for rare, 50 minutes per kg for medium, 60 minutes per kg for well done, plus around 20 minutes on top, cooked at 180°C (fan 160°C, gas mark 4). Enter your joint's weight above and the calculator does the arithmetic. Sear at a high heat first if you like. Rest, loosely covered, for 15 to 20 minutes.
Weight-based timings are a starting point, not a guarantee: oven calibration, whether the meat went in fridge-cold, and the shape of the joint all matter.
